It really depends on the sheet music but usually if we are talking about a note for note type of sheet music, you can simplify the left hand but just playing the root notes in whole notes. And for the right hand really focusing on the melody notes instead of all the chords.

In the case of a leadsheet, I would suggest playing only the triad chords when there’s more complexed symbols.
